Hello lovelies! How are things with you this week? Did you enjoy Lucy’s Creative Happenings? Sometimes we feel we are not achieving much, so it's lovely to have a chance to round it all up for you, our precious readers.
As you know, I am all for embracing the rituals of the season. After the excitement of Christmas and New Year, I really need this to get through the rest of winter here in the U.K. After Burn’s night, when we celebrate the birthday of Scotland's most famous poet, (and much whisky is drunk…..), Valentine's Day, which we try to ignore, we have Shrove Tuesday, or as we call it in our house ‘Pancake Day’. I believe originally the idea was to use up all your eggs and milk before the Lenten fast. We love pancakes, and especially when the boys were little, I would try to have as many pancake based meals on the day as I could!

I used Rachel Allen's American Pancake recipe, omitted the sugar, and made tiny versions which I topped with sour cream and smoked salmon.
My hubby is the main cook in our house, so I roped him in, and he obligingly made a stack of flat pancakes, a ragu and a white or bechamel sauce.
I filled rolled up pancakes with the ragu, put them in an oven proof dish and spread them with the white sauce.
A sprinkle of cheese on the top, 45 minutes in the oven, and a delicious warming meal!
Every summer I freeze bags of my favourite summer berries to use through the winter months. I made a blueberry sauce, reheated the leftover large pancakes and served them with a swirl of cream. Delicious, though I admit I may have had to have a lie down after that meal!!
I was at work at the weekend, so I baked some brownies to take in for the team.....
I looked for pretty houses in the neighbourhood to cheer myself up on those wet, grey, mornings..... this gorgeous pub, the Pineapple is literally at the end of my street....
I finally finished my first mixed media collage painting, not sure if I love it, but the great thing is if I don't, I can just paint over it and start again!
